Delicious roasted (halved) and in soup (after peeling). Pumpkins owe their yellow orange color to beta carotene provitamin A, which has a strong antioxidant effect. Of fruits and vegetables grown in Poland, pumpkin is one of the richest sources of beta carotene, which together with vitamin C protects against free radicals.
